Pear & Stilton Cheese Tart

PEAR & STILTON CHEESE TART RECIPE

1. Gather Your Ingredients for the Crust
1 1/2  cup of all purpose flour
1 1/2 sticks of butter room temperature
1 teaspoon of salt
 1/2 cup of brown sugar
Iced water

2. Gather Your Ingredients for the Filling
2 or 3 Pears
Stilton or Blue Cheese
1 small leek
1/4 cup of brown sugar
 1 lemon

3. Preheat your oven at 350*

4. Prepare Your Crust
In a mixing bowl, add the flour, brown sugar and salt and mix them.
Cut the butter into squares and add them to the mix.
Mix everything with your hands until you have a buttery dough and form a ball.
If your dough is to dry you can add 1 teaspoon of iced water.

Warp it in plastic and chill for 30 min.

5. Prepare Your Filling
Slice the pears removing the heart and seeds
Put them in a bowl and squeeze 1/2 a lemon on top to avoid oxidization.
Slice the leek separating each slice
Crumble the Stilton cheese and set a side

6. Blind Bake Your Crust
Take your crust out and start rolling into a disc big enough to cover your pie container.
Grease with butter the bottom and sides of your container and place the disc of dough covering all the base and with your finger tips cover a little of the sides.

Bake it for 10-15 min or until golden and take it out to cool for 15-30 min.

7. Arrange Your Pie
Arrange the pear slices on a circular way given it a flower like petal shape.
Place the leek slices on top and crumble the Blue cheese on top.
Squeeze the remaining 1/2 lemon on top of everything and add the brown sugar to caramelize the top.
(You can add more brown sugar if you want more caramel on top of your pie)

8. Bake
Bake for another 10-15 min until the pears are golden brown and the sugar has melted and it’s caramelized.

Chill for 10 min and serve.

Decorate with Rosemary or Eucalyptus leaves and branches.
